Sunday is Cinco de Mayo and we want recognize this special day in history along with Mexico and our Mexican-American friends.  While many believe this is the Mexican Independence Day, this day is actually celebrated in remembrance of the Mexican Militia victory over the French Army at the Battle of Puebla in 1862.   Mexico’s Independence Day is on September 16.

The League of United Latin American Citizens (LULAC) will be hosting its annual Cinco De Mayo parade in Downtown Houston on Saturday, May 4, 2013, at 10 a.m.  This will be the 21st year that LULAC sponsors the event. There are over 100 participants in the parade which includes floats, marching bands, classic cars, colorful dancers, and mariachis.  The parade begins at the intersection of Texas and Hamilton and ends at Minute Maid Park around noon.

If you want to do something special to celebrate Mexican heritage and traditions with your family, you can host your own celebration.  There are easy meals you can prepare that will be a hit with your family and any guests you invite.  Whether you have a celebration in a park, at a beach, or in your own backyard, with a little preparation you can incorporate some traditional Mexican meals.

Regardless of where you celebrate making certain Mexican meals is quite simple.  Here is a quick, easy and very delicious recipe for making a tostada meal.

Tostadas

To serve two people you’ll need:

1 pound ground meat of your choice;

1 packet McCormick taco seasoning;

1 can refried beans of your choice;

1 fresh serrano pepper;

1 lemon or 1 lime;

¼ of an onion;

½ tomato;

Diced cilantro – amount depends on your preference;

1 cup of Mexican shredded cheese of your choice;

Tostada Chips of Your Choice.

Cook the ground meat following the instructions on the McCormick package.  Heat the refried beans in the microwave or stove top.  Dice onion, tomato, and serrano pepper and mix in a bowl.  Add squeezed lemon or lime juice and cilantro and mix all together for pico de gallo.  On your tostada chips, spread refried beans, add taco meat, cheese, and pico de gallo.  This is enough to serve as a satisfying meal or you can make nachos out of it using Tostitos corn chips.
